Directions
- Steam cauliflower in a steamer basket over boiling water until tender, about 3–4 minutes. Mash with a fork.
- Meanwhile, heat a nonstick skillet with 1 teaspoon virgin olive oil over medium-high heat. Add onions and sauté until tender.
- Add onions to mashed cauliflower and top with cheese.
- Optional: We added pieces of fried bacon to our mash. Very yummy!!!
