Hot Dog Soup

Ingredients
2 Tablespoons canola oil
1/2 onion, thinly sliced
1 Pound sauerkraut, rinsed and drained
6 smoked pork hot dogs
29 Ounces beef broth
1 3/4 Cups water
2 Teaspoons yellow mustard
1 Tablespoon granular sugar substitute (sucralose)
1/8 Teaspoon bay leaf (1 whole leaf)
1/8 Teaspoon salt
1/8 Teaspoon freshly ground black pepper, or to taste

Directions
Heat oil in a medium soup pot over medium-high heat. Add onion and cook 5 minutes, until softened.
Stir in sauerkraut, hot dogs, broth, water, mustard, sugar substitute and bay leaf.
Simmer 5 minutes for flavors to blend. Remove bay leaf. Add salt and pepper. Serve immediately.
